dc.description.abstract Drying is probably the oldest method of food preservation practiced by mankind (Renteria Gamiz et al., 2019). Drying has been a multi-purpose tool for both pharmaceuticals and food processing since the 1950s-1960s. The major challenge during dehydration of food is to reduce the energy substantial loss of color, appearance and. chemical components (Liu et al.,2022).
