Bacterial quality and safety of fast-food paper packaging materials in selected areas of Nansana Municipality, Wakiso District

Abstract

The bacterial safety of fast-food paper packaging materials is a significant public health concern, particularly in urban areas like Nansana Municipality, Central Uganda. This study aimed to assess the bacterial status of packaging materials commonly used to pack fast foods. This would help to ascertain, health risks to consumers by determining the microbial load and types of microorganisms present on fast-food paper packaging materials. A total of 80 samples of fast-food paper packaging materials were collected from various vendors within Nansana Municipality. These samples were subjected to microbiological analysis, including culturing, enumeration, and identification of bacteria. Standard microbiological methods were employed to quantify the microbial load. The study revealed significant bacterial contamination in fast-food paper packaging materials. The Total Aerobic Bacterial Load (TPC) ranged between 1.01×104 and 5.2×106 CFU/g, with a mean of 3.92×105 CFU/g, significantly exceeding the standard accepted value of <105 CFU/g (p < 0.001). The Total Coliform Count (TCC) had a mean of 5.19×105 CFU/g, also significantly higher than the standard value of <10³ CFU/g (p < 0.001). Escherichia coli was found in 30% of samples, with a mean count of 6.10×10² CFU/g, and Staphylococcus aureus was present in 82.5% of samples, with a mean count of 4.35×10³ CFU/g. The findings indicated high levels of microbial contamination in fast-food paper packaging materials in Nansana Municipality. The high levels of TPC and TCC, along with the presence of E. coli and S. aureus, pose significant health risks to consumers. These results highlight the urgent need for improved hygiene practices and regulatory measures. These include enhancing food safety regulations, conducting regular inspections, enforcing compliance, and implementing comprehensive hygiene training programs for workers involved in the production, handling, and packaging of fast-food material.
