Assessing the nutritional content of fresh and smoked bamboo shoots in Nyapea, Zombo district
Abstract
Bamboo shoots sprout in the wet season and are edible. Despite them being used as a vegetable in
some parts of the country, there is still scanty information on the nutritional content of bamboo
shoots in Uganda. The objective of this study was to assess the nutritional content of
Oxytenanthera abyssinica shoots in Uganda and examine the proximate contents in both the fresh
and smoked shoots. The shoots were collected from Nyapea sub-county, Abeju Parish, Zombo
district and were later analysed for their nutritional content. Moisture content in the fresh shoots
was 91.4% and 13.1% in the smoked shoots. Oil content did not vary significantly between the
fresh and smoked shoots.
